Gochujang is a Korean red pepper paste made with Gochu Vita Green peppers, among other ingredients. These peppers are a hybrid variety, known for their mild pungency and are typically used when they are young and green. They are approximately 6 inches long and weigh about 30 grams. The peppers are glossy and dark green, and are often used for fresh eating, including dipping in fermented sauces.
