UNIQUE CREEK HOMESTEAD SEEDS: All of our seeds are grown right here on our Unique Creek Homestead and not sourced from elsewhere. All seeds are collected each growing season and are 1-year old or less, stored in air-tight Mason jars. Seeds are harvested and labeled for storage each season, one plant/seed type at a time so seeds do not get mixed by accident during the process! The seeds we use at the start of each growing season come from the exact same seeds we sell.

ABOUT THESE SEEDS: Thai Bird's Eye peppers are small, intensely hot chili peppers with a Scoville heat rating of 50,000-100,000, making them hotter than a jalapeño but milder than a habanero. Known as prik ki nu in Thailand, they have a spicy, sweet tropical flavor and are a staple in Southeast Asian cuisine, used fresh or dried in curries, stir-fries, soups, salads, and sauces.

Characteristics

Heat: 50,000-100,000 on the Scoville Heat Units scale, which is significantly hotter than a jalapeño.

Appearance: Small, thin, pointed fruits that are green when immature and turn bright red when fully ripe. Flavor: A distinct, sharp, pungent, and spicy-sweet tropical flavor. Maturity: Can be harvested as green or red peppers; red peppers are generally hotter.

Culinary Uses: Cuisine: Essential in Southeast Asian cuisine, especially Thai dishes. Preparation: Can be eaten fresh or dried. Dishes: Commonly added to curries, stir-fries, salads, soups, sauces, and salsas. Serving: Can be served raw on the side, as an ingredient in dressings or marinades, or used to make a fiery chili oil.

Growing Conditions: Climate: Flourish in warm, sunny conditions and require consistent temperatures above 70°F. Soil: Need well-drained, fertile soil with a neutral pH. Planting: Start seeds indoors 6-8 weeks before the last frost.

Other Names: Prik Ki Nu: The name for Thai chilies in Thailand. Thai Chili: Another common name for the Bird's Eye pepper. Thai Dragon Pepper: A fitting name for these hot, dragon-like chilies. African Devil: Used as a name for some bird's eye varieties

 

Sow seeds in flats or pots 8 to 10 weeks prior to the expected outdoor planting date. Sow them shallowly, around 1/4 inch deep. Hot peppers, and especially super-hot peppers, have a well-earned reputation for being finicky to germinate, but you can increase germination rates by providing bottom heat (highly suggested).
