UNIQUE CREEK HOMESTEAD SEEDS: All of our seeds are grown right here on our Unique Creek Homestead and not sourced from elsewhere. All seeds are collected each growing season and are 1-year old or less, stored in air-tight Mason jars. Seeds are harvested and labeled for storage each season, one plant/seed type at a time so seeds do not get mixed by accident during the process! The seeds we use at the start of each growing season come from the exact same seeds we sell.
ABOUT THESE SEEDS: The Santa Fe Grande pepper (also known as the Güero chili pepper or yellow hot chili pepper) is a prolific, heirloom variety of Capsicum annuum widely grown in the Southwestern United States. It is celebrated for its stunning visual transitions during ripening and its versatility in mild-to-medium spicy culinary dishes.
Key Characteristics
Appearance & Color: The plant produces 3-inch long, blunt, conical fruits. As they mature, they shift in color from a pale greenish yellow to bright orange, and finally to a glossy, fiery red.
Flavor Profile: They feature thick, crunchy walls with a slightly sweet and tangy undertone.
Heat Level: Generally mild to moderate, registering between 500 and 700 Scoville Heat Units (SHU) on average, though some seed variants or environmental factors can push them slightly hotter. They serve as an excellent, milder alternative to jalapenos.
Plant Size: Compact, sturdy bushes that typically grow 24 to 30 inches tall.
Yield: Exceptionally high producing; a single plant can continuously yield 20 to 50 peppers throughout the summer season.
Culinary Uses
Because of their thick walls, crunch, and mild bite, these peppers excel in specific dishes:
Pickling: One of the most popular uses for this variety. They hold their texture well in vinegar brines.
Salsas: They provide an ideal sweet-and-spicy balance for fresh, colorful summer salsas.
Fresh Eating: Perfect when sliced into salads, added to sandwiches, or stir-fried.
Growing and Planting Quick-Facts
Days to Maturity: Roughly 75 to 80 days from transplanting.
Sun & Soil Requirements: Requires full sun. Thrives best in well-draining, loose sandy loam with a slightly acidic to neutral pH (~6.5).Starting Seeds: Sow seeds indoors 8 to 10 weeks before your region's last expected frost. Keep soil warm (80–90°F) to ensure successful germination.Transplanting: Move outdoors late in spring once the threat of frost has passed. Space plants about 12 to 18 inches apart
