UNIQUE CREEK HOMESTEAD SEEDS: All of our seeds are grown right here on our Unique Creek Homestead and not sourced from elsewhere. All seeds are collected each growing season and are 1-year old or less, stored in air-tight Mason jars. Seeds are harvested and labeled for storage each season, one plant/seed type at a time so seeds do not get mixed by accident during the process! The seeds we use at the start of each growing season come from the exact same seeds we sell.

ABOUT THESE SEEDS: The Nu Mex Sweet pepper is a mild, heat-free heirloom variety (Capsicum annuum) developed by the Chile Pepper Institute at New Mexico State University. It delivers the classic, rich flavor and horn-like shape of a traditional New Mexican pod—resembling an Anaheim type—but features 0 Scoville Heat Units.

 

Key Facts

Size: 5 to 8 inches long and roughly 1 to 2 inches wide.

Color Transition: Ripens from bright green to a deep, glossy dark red.

Flavor & Texture: Sweet and meaty with thick flesh, making it ideal for drying into paprika, roasting, or eating fresh.

Maturity: Around 85 to 90 days after transplanting.

Growth: High-yielding, sturdy plants that reach about 3 feet tall.

 

Uses

Roasting, stuffing, and adding to summer salads.

Slicing into salsas or stir-fries for rich red color without spice.

Drying and grinding into homemade sweet paprika or chili powder.

 

Sow seeds in flats or pots 8 to 10 weeks prior to the expected outdoor planting date. Sow them shallowly, around 1/4 inch deep. Hot peppers, and especially super-hot peppers, have a well-earned reputation for being finicky to germinate, but you can increase germination rates by providing bottom heat (highly suggested).

 

Excellent for stuffed peppers, nacho chips & cheese, tacos, chilis, stews, salads, salsas, pickled peppers, on sandwiches, snack crunchers and more!
